3 eggs- seperated
2 tsp sugar
1/2 tsp salt
2 C buttermilk
2 C flour
1 tsp baking powder
1 1/4 tsp baking soda
Beat egg whites very stiff, set aside.
Beat egg yolks. Add sugar, salt and buttermilk mix.
Add flour, baking powder and baking soda, mix.
Very gently fold in egg whites.
Preheat pan over med/med-high heat. Watch for it to start smoking.
Put in shortening and test temperature with a little batter.
Fill wells 1/4 full with shortening.
Fill wells 3/4 full with batter.
Cook until bubbles start to pop. Turn with fork. Cook until golden brown.
