1 1/2 Cups Rice
1 Cup Water
3 Cups Milk
3/4-1 C Sugar
1 1/2 tsp Vanilla
3/4 tsp Almond Extract
1 pint Whipping Cream
2 TBS Powdered Sugar
Boil Water to rinse Rice 3 times.
Combine rice, water and milk in a large pot.
Slowly bring to boil in a covered pot (tilt lid to let steam off) stirring often. Cook about 1 hour or longer until rice is soft, add milk as necessary to keep rice covered in liquid.
Once rice is soft remove from heat, stir in 3/4 - 1 cup sugar.
Smooth top of rice out and pour a little milk on top to keep top from drying and forming a crust. Cover and cool thoroughly, over night.
Once rice is cooled stir in Vanilla and Almond extract.
Beat whipping cream until stiff adding powdered sugar to taste to hold body. Beat enough cream to be 1/3 to 1/2 volume of Rice.
Gently fold cream into rice and serve.
When the rice is hot just before putting it into the fridge, scoop out a little into a bowl add butter, sugar and cinnamon on top for a nice treat.
