2 C cubed ham
4 C diced potatoes
2 C corn
1/4 C minced fresh parsley
1 T chapped onion
1/4 C butter
1/3 C flour
1 3/4 C milk
1/8 tsp pepper
2 C shredded cheese
Preheat oven to 400
Dice potatoes and place in preheating oven.
Sauté onion in butter for 2 min.
Stir in flour until blended.
Gradually add milk and pepper. Bring to a boil; cook and stir for 2 min.
Remove from heat. Add ham, corn and parsley to potatoes. Pour sauce on top.
Bake for 25 minutes.
Sprinkle with cheese. Bake 5 to 10 minutes longer or until cheese is melted.
