1lb ground beef
1 cup yellow onion, diced
3 garlic cloves, minced
1 tbsp olive oil
1 pkg (1.31oz) taco seasoning
1/2 tsp sea salt
1 can black beans, rinsed and drained
1/2 cup roasted corn
1 can (4oz) mild green chiles
1 1/2 cup beef broth
1 cup organic white rice
1 cup chunky mild/medium salsa
1 cup shredded Mexican cheese
optional: fresh cilantro
Start by sauteing your minced garlic and onion in a large pan with olive oil.
Once sauteed, add the ground beef to brown.
Add taco seasoning and sea salt to mix.
Rinse and drain your black beans and corn. Add to the pan with green chiles, salsa and rice, beef broth,
Mix to combine.
Bring to a boil for 1-2 minutes.
Reduce to a simmer and cover with a lid to allow the rice to cook through. Occasionally stir. This should take around 15-20 minutes for the rice to fully cook. Be sure to taste the rice to make sure it has fully cooked before removing from the heat, you may need to add an additional 4-5 minutes.
Top with shredded Mexican cheese and cilantro.
